A Lot of “Chefs” in the Kitchen
The project needed to be completed within a strict timeframe while allowing the existing kitchen to remain operational during the process. D-Mar created a comprehensive plan that implemented expert coordination and construction management to maximize efficiencies, utilize limited space and stay on budget.
Focusing on constant collaboration and communication, detailed planning, and skillful management, D-Mar completed the project in only five months without interrupting operations.
Containing Construction
The 50,000-square-foot second floor of the building was completely reconstructed using containment methods such as walls, negative air, and air scrubbers to avoid disruption of the main level kitchen. The hot food line was revamped in a two-phase process to ensure operations could continue, while coordination of cooler and flash chiller installation allowed hot and cold elements to be completed in unison.
